Roasted Tomato Salsa

This 6 ingredient, quick 20 min spicy salsa recipe has roasted tomatoes, jalapeños, garlic, caramelized onions, cilantro and lime.

- 12 Roma tomatoes
- 2 jalapeños, cut in half
- 5 cloves garlic
- 2 small onions, cut in half
- 4 tablespoon lime juice
- 1 cup cilantro, chopped
- 1 tablespoon oil
- salt to taste

Lightly oil your baking dish and place the tomatoes, jalapeños skin side up, onions and 5 unpeeled cloves of garlic. Broil for 15 minutes until the ingredients have charred. Turn the ingredients while broiling for an even char.
Remove from the oven and let it cool for 5 minutes. Add all the charred ingredients in a blender. Squeeze the garlic into the blender and discard the peels.
Add lime juice, cilantro to the blender and season with salt and pepper. Blend all the ingredients to a smooth or chunky sauce based on your preference. Serve with tortilla chips.
