Roasted Tomato Salsa

This 6 ingredient, quick 20 min spicy salsa recipe has roasted tomatoes, jalapeños, garlic, caramelized onions, cilantro and lime.

Ingredients
  

  • 12 Roma tomatoes
  • 2 jalapeños, cut in half
  • 5 cloves garlic
  • 2 small onions, cut in half
  • 4 tablespoon lime juice
  • 1 cup cilantro, chopped
  • 1 tablespoon oil
  • salt to taste
  • pepper

Instructions
 

  • Lightly oil your baking dish and place the tomatoes, jalapeños skin side up, onions and 5 unpeeled cloves of garlic. Broil for 15 minutes until the ingredients have charred. Turn the ingredients while broiling for an even char.
  • Remove from the oven and let it cool for 5 minutes. Add all the charred ingredients in a blender. Squeeze the garlic into the blender and discard the peels.
  • Add lime juice, cilantro to the blender and season with salt and pepper. Blend all the ingredients to a smooth or chunky sauce based on your preference. Serve with tortilla chips.
