Walk through the Recipe
Let’s start preparing our roasted tomato salsa.

We begin by placing the tomatoes, jalapeños, onions and garlic in a lightly oiled baking dish.

We then broil it in the oven for 15 minutes and turn the ingredients in between for an even char.

After allowing it to cool for 5 minutes, we add all the charred ingredients in the blender. We also add in the cilantro, lime juice and seasoning.

We blend all the ingredients to a smooth or chunky sauce as per your preference.
Serve the sauce as a topping for tacos, burritos and quesadillas or simply serve as a dip with tortilla chips.

Substitutions
You can replace some of the ingredients in the recipe to suit what you have at home.
- Roma Tomatoes: vine-ripe tomatoes, mix of both
- Cilantro: parsley
- Jalapenos: Serrano peppers, red pepper flakes
- Garlic: garlic powder

- Roma tomatoes: Roma tomatoes are preferred for preparing salsa but you can use other varieties as well.
- Cilantro: You can either add the cilantro to the blender or finely chop and add after blending.

Roasted Tomato Salsa
Ingredients
- 12 Roma tomatoes
- 2 jalapeños, cut in half
- 5 cloves garlic
- 2 small onions, cut in half
- 4 tablespoon lime juice
- 1 cup cilantro, chopped
- 1 tablespoon oil
- salt to taste

Instructions
- Lightly oil your baking dish and place the tomatoes, jalapeños skin side up, onions and 5 unpeeled cloves of garlic. Broil for 15 minutes until the ingredients have charred. Turn the ingredients while broiling for an even char.
- Remove from the oven and let it cool for 5 minutes. Add all the charred ingredients in a blender. Squeeze the garlic into the blender and discard the peels.
- Add lime juice, cilantro to the blender and season with salt and pepper. Blend all the ingredients to a smooth or chunky sauce based on your preference. Serve with tortilla chips.
